I have the Samsung Galaxy s6 and it's running Android 5.1.1 and I'm trying to update it to android 6.0.1 so I can get android nougat but my phone won't update to 6.0.1.

Although the Android 6.0.1 update has been released to the Galaxy S6 for quite some time, there could be a few factors preventing you from updating. Ensure you are using an AT&T branded device, the AT&T logo should appear on your screen upon startup. You will want to reboot your phone to ensure a fresh connection to our network, thus connecting to a strong Wi-Fi connection to check for updates. Upon connection to Wi-Fi, tap Settings> System tab > About Device > tap Software update to get started.
If you are still having issues, I recommend running your phone through Samsung Smart Switch for updating your device manually. For all the details on this process, please click here. You also have the option to take your device to any Best Buy to update your phone through the Samsung experience bar.
