ALL iPhones use the same connectors. The original iPhone, iPhone 3G, iPhone 3GS, iPhone 4, iPhone 4s are all the same style and size connectors.

Yes, the streaming of music via apps such as Pandora or videos via apps like Youtube, netflix, hulu, etc are all forms of data use and will count against your monthly data limit unless you are connected to a WiFi network.

What josephz2va said is correct. I have a 2011 car that supports all ipods and iphones (up to 3GS) with a catch which is also the reason the iPhone 4 is not supported..The catch is the devices can not be on iOS4.0 or later. Something changed in iOS4 that made many makes and models of cars USB ports no longer compatible with the iPhones and iPod Touches.

I think Dwill is misunderstanding your question. Essentially you want to use your wifes upgrade to upgrade your line to the iPhone 4 but dont want to add a data plan on her line. Actually the unlocks come from Apple. Carrier submits request to Apple, Apple then authorizes a unlock code so the next time the device is connected to iTunes the device will get unlocked.
