AT&T Next Questions.

If I lost my phone that is on the AT&T next plan, can I use a different phone but continue to still pay the monthly installments on the lost phone until finished or do I have to pay off the remaining of the installments at once before being able to use a different phone on my line?

Yes, you can use a different phone and continue making payments on the lost phone. There is no requirement to use the phone you are paying for.
