What is mobile data? We have unlimited messaging on our family plan but 20 GB of data. One phone is flying thru data and I need to identify why and what?

Mobile data is just one other way that mobile devices access the internet. Certain activities can lead to increased data usage: High definition video streaming; Online interactive gaming; and even app sync, data, and notifications. Follow these instructions to check your current data usage and learn more about other activities which could increase data usage.

I’m not sure where you were reading, but I suspect it’s old information. Current smartphones run very efficiently when in “standby” (not actively using an app). ‘Background app refresh’ is off by default. It conserves data and battery life.
Conversely when using an app data is going to be consumed at different rates depending on the demands of the app.
High use are video; audio and turn by turn directions moderate; things like email use very little. Very few apps will run in the background without permission.
Please look in settings, cellular data usage on the phone/s to see which apps and services are actually using your data. If you do find an app using a lot of data, it may have settings to restrict it. (See photo sample)
iPhones do not reset with your bill cycle!
You have to manually reset each month so set a reminder. ‘Reset statistics’ is how you clear.
Current period is the total data used.
Wifi assist can be turned off.
You want WiFi (1st photo, top left) to stay on to conserve mobile data when WiFi is available.

The only information on what and how much data is used is on the device itself. In settings, data usage.
Any application or service on smartphones uses data to function. 20 gigs is quite a bit of data, so the user must be watching a lot of video

it was suggested that I check how often my apps are updating the data and
set different parameters. I cant determine how to do this on my
phone.Please advise. I have a 6 plus iphone.

It's possible to view which apps are using data by navigating to Settings > Cellular or Settings > Mobile Data. Find out more about checking data usage iby following these instructions.

pictures are never included in emails. I write ‘see photo’ so people will go back to the website.

What exactly is mobile data? I see this on my bill just not sure if it is Facebook, messenger, email, etc. Please explain to me what it is. Thank you.

See photos, and then look in your phone settings to see a similar list. All those apps are what used your data. The numbers expressed in MB or GB are how much used by the application or service.
