You should be able to cancel the insurance from your online account, otherwise you will need to call AT&T - 611 - from your phone.

Log onto your AT&T account.
Click on your profile. Below alerts, click on manage devices & features.
Hit the + sign under My Wireless.
Scroll down and you will see all your devices.
Select the device you would like to remove the phone insurance off of.
Under My Current Features you will see AT&T Mobile Insurance. Click the arrow besides it.
At the bottom of the packages you will see Remove. Select that and Continue.
You will have to confirm that you are removing At&T Mobile Insurance.
You will have to repeat these steps for each phone.
