Unfortunately, my old iPhone was taken out by a wave at the beach. The guy at the repair place tested the motherboard and it seems to be working OK. I have a new iPhone on the way and I'd like to transfer all the data from the old phone to the new phone.
From what I understand, iTunes will save the data from the old phone and when I set up the new phone in iTunes, I just pick "restore from backup" - is that right? Will everything be transferred to the new phone - contacts, apps, texts etc?

Thanks! I read through the info on the link, but I didn't see any mention of apps being transferred. Are the purchased apps saved and moved to the new phone too or is there another process to move apps (or can it even be done)?

It should just all sync over. You may need to go into one of the tabs and reenable they syncing of apps but I think I recall it just happening. I know I have never lost data or apps during a phone swap especially when you have a good backup on your computer.
