Pioneer VSX 821 k Receiver and Uverse TV Set Up Help!

I just bought the Pioneer VSX 821 k and have tried to set it up with my Uverse and I get spotty audio when I have the Uverse box switched to surround sound.  Any help on how to configure so that I can take advantage of my new receiver and speakers in 5.1?

 

Set up:

 

Insignia TV -> UVerse box (HDMI)

Insignia TV -> Pioneer Receiver (optical digital audio cable)

 

I called AT&T and they advised I switch the optical cable to an RCA cable.  The audio quality on the surround is only really coming through the center channel when I do that or just sounds echoy when I switch the surround mode to other settings.

 

I'd really prefer to stay digital as much as possible with as few cables as possible, but know that it is well documented that audio drops occur with certain set ups.  If you have a set up that works please advise.

Don't take the audio output from the TV to the Pioneer.

Use the optical audio output from the U-Verse box to the Pioneer, and turn the TV speakers off.

Audio output from the AT&T box doesn't work, or at least not with my Samsung surround system.  So disappointing.
