I am going on a vacation outside the US for two months, I don't want to pay my plan because I won't use it but I don't want to lose my number when I come back. Would just cancelling autopay for these months work?
i would say no it wouldnt work but the people in the forum will need more information, post paid or prepaid? what plan are you on

If you have postpaid service, you can’t pause billing. If you have prepaid, yes you can cancel autopay but if you are gone more than 2 months, you may lose your number. If your prepaid balance is $0 for more than 60 days after your plan expires, your account is closed and you lose your number.
