Monitor Web History From Router

Is there a way to log URL's of sites visited from my entire network? I'm using the 2wire router provided by Uverse, but functionality seems limited. It appears I'm only able to block sites, not view traffic.

If not, is it possible to use my own router to replace the 2wire?

You may not replace the 2WIRE with your own router.  However, you may connect your own router "behind" (from the Internet's point of view, "in front of" from your network's point of view) the 2WIRE.

The 2WIRE doesn't have the functionality you're looking for, so that's probably what you'd need to do.  For a quick outline, see the solution in this thread

Thanks for the definative answer. It is very helpful.

As for adding an additional router to my network, would this have any noticable affect on my network speeds?

Maybe, but rarely will it make anything worse (if properly configured).  Most routers will have better wireless capabilities than your Residential Gateway and you likely won't lose anything on wired, either.
