Hello @4smurphy,
I am sorry to hear a note was accidently deleted! I know how important saved notes can be. I used them myself incredibly frequently. I will be more than happy to help recover it!
In order to restore the note, you will need to login to your iCloud account online. Apple has a wonderful support article which guides you through the restoral process.

If you cannot find the notes from iCloud backup files, maybe you can try recovery tools to scan your iPhone and find the deleted notes. But if the data has been overwritten, it will be difficult.
