If they gave you and you kept the card you got to set up the eSim on the old phone, it’s used to set up the new phone. If you didn’t keep it, you have to contact At&t to replace it.

How would this work if on the old iphone you didn't even use an AT&T qr code and instead used ios to convert your sim to an esim?

During the transfer of data from your old iPhonephone to new iPhone you are given the opportunity to transfer your eSIM. Link below from Apple on how to do this.
