Can account holder access all emails
Does the account holder have access to emails icloud information data or text messages? Can a phone be shadowed? Or all my data & everything be seen by the account holder & can they manage what the authorized user is allowed to see?

Account owner for which account, iCloud or ATT account? The ATT account owner can't see any of your iCloud information unless they have the login to your iCloud account. No, an iPhone can not be shadowed but once again, if they have access to your iCloud account it is very possible that you are sharing information with them. The only information they can see on the ATT account is your call, text and data records. That's time, date and number for calls and texts and how much data. They can't see any content.
