You're not actually switching a plan, you're starting a new one.
Which model iPhone is it? Was it AT&T branded or straight Talk?

Also keep in mind you may need to get Straight Talk to unlock the phone...

This page indicates it may or may not be. That also indicates the OPs phone may or may not be a GSM phone...

Yeah, looking around it's confusing. (I don't think they own it). Looks like some of ST isn't GSM and but you can get teh SIM for AT&T LTE. And something else made me wonder if they even still did that.
