what does Non-Advanced Recipient mean?
Why does it come up "Non-Advanced Recipient" come up when I am trying to text a contact?

This is a good question! I’d be more than happy to assist you with your text issue!
This error indicates the person you are messaging does not have Advanced Messaging turned on. You can turn this feature off by going into the Messages app > select the 3 dots in the top right corner > Settings > Advanced Messaging > Off.

It just means that person does not have an AT&T Advanced Messaging compatible phone or they're with another carrier. Advanced Messaging only works between qualified customers with phones that have it.
Newer Android devices such as Galaxy S6 and newer, LG G4 and newer.

I have an LG3 and non-advanced recipient keeps coming up ...
even if I went to settings and it's "off"
