How can I watch uverse on my laptop

The Uverse app is compatible with:

• iPhone®, iPad®, or iPod touch® (iOS 12.1 and above)
• Android® smartphones and tablets (OS 7.0 and above)
• Amazon Fire TV devices

I don't believe you can other than using websites and/or apps belonging to the individual channels.

The website that AT&T provided for unified U-verse viewing ended around 5 years ago.  As baseballisback said, you can use the websites from the individual channels, authenticated by your AT&T Connection or account information.

If your "laptop" is a Chromebook, then perhaps you could load the U-verse TV Android app on that.

And keep in mind that not all channels may be accessible via the U-Verse app. I can't watch broadcast channels on there.
