Can We Just Keep U-Verse TV?
We are currently in the market to switch to Spectrum's 400 mbps internet and their home phone service. We currently have U-Verse U300 AT&T Internet 50 and Phone Unlimited North America and want to keep our U-Verse TV. Is this possible or would we need AT&T's internet service too. Also, does this mean that the Stingray Music channels won't work and would we still have a modem/router combo or is there different equipment just for the TV service?

We're here to help, @jwerbuildsPCs15.
U-verse TV is available as a standalone product, however it does require that an AT&T Residential Gateway is in the home in order to authenticate and receive channels through our network. This means that you will end up with 2 routers/modems essentially, but the AT&T Gateway will deny internet access to any other device.
Stingray Music does require an AT&T Internet subscription of at least 1.5 MBPS in order to work, so cancelling the internet will disable that app and other interactive features for your U-verse TV service.
Let us know if you have any other questions or concerns.

Would this mean that the On Demand service or the DVR service wouldn't work too?

Hello @jwrbuildsPCs15,
To answer your question that is correct, without internet service for you U-verse the on demand would have issues loading.
