How can I tell how many streams are currently in use for att tv now?

I don't believe there is a way.  Why do you want that info - do you suspect someone other than you is using your account?

There are several devices around the house that could have an open stream.  It would be easier to be able to tell how many streams are open and also to be able to close all streams from my account.
