I have checked blocked email addresses - not there. I have checked spam not there. The sender says it looked ok on their end and it was sent. I still do not have it

My contacts list seems to include every Email address that ever sent me an Email, including ones that look like, "[email scrubbed]". I don't want to add every sender to my contacts.  How can I turn off this "feature"? THANKS
