It would be in settings, connections, scroll down and look for sim manager.

I can use other networks except for the e sim which I feel is being disabled

We're more than happy to get you on the right track of activating your eSIM!
The Galaxy S20 contains an eSIM inside the phone and requires you to visit a Local AT&T Store Near You to receive a QR code that's printed on eSIM card.
Once you have the QR code, you can follow these instructions to Install Your eSIM.
If you have AT&T postpaid wireless, make sure the eSIM is on an active wireless plan, then download it over Wi-Fi. If you instead have AT&T prepaid, you will have to contact the Prepaid Department for assistance with eSIM activation.
