Nexus One w/o Data

I don't want to be stuck with a basic phone, but I also don't want to pay outrageous fees for data. Is it possible to start a plan with a basic phone and pop the SIM card into something like a Nexus One or iPhone 2G? Also, will a T-Mobile phone work on AT&T's networks? Thanks.
