If you have digital service you can turn it off and on in your MyAtt account. If traditional landline you'll need to call.

As he stated, if you have digital phone you can manage your voicemail through the myATT app.
If you have traditional landline, you will need to call our support team at (800-288-2020).

Re traditional landline voicemail on/off, ATT support tells me it can't be turned off temporarily, only permanently. If that's true, that renders it useless for me unless the number of rings before pickup can be increased, and of the 8 ATT support people I asked none of them knew how to do that.

You might be able to use Call Forwarding No Answer / Call Forwarding Busy to redirect the call somewhere else to avoid it going to Voice Mail, if that would help.
Here is more information on how to change the number of rings for your voicemail. The max number of rings you can have is 6.
