How deep can I plant trees around an SBC utility easement on my property?
There is an old SBC utility pole in the corner of my backyard which I am remodeling. I want to make sure that whatever I plant back there won’t interfere with the lines leading up to it. Are there any guidelines for what I can or can’t plant?

The pole is (most likely) within the utility easement. MOST utility easements have a perimeter around them that cannot have any plantings.
Check with your local property tax assessment authorities. They determine where a UTILITY EASEMENT lies and the rules and regulations around them.
