Dig into advanced settings in your email.
Settings, account and password, (chose email) account, advanced.

Email clients have a setting to either delete mail from the server after a specified amount of time (including immediately) or alternatively worded keep mail on the server for a specified amount of time. The sever mailboxes are mirrored in the webmail. So deleting an email from the server will appear as it being moved to the trash in the webmail.
You say you using a laptop and IPhone both accessing the same email account. Assuming both clients are set as IMAP for the account, if one deletes an email (and thus causes it to move to the trash in the webmail) it would appear to move to the trash in both clients. I assume this is your problem. So look for that setting to delete or keep email on the server. I think that is what @lizdance40 was alluding to in his post.
