Why can’t I get more gigs for my fixed wireless plan?

My plan started with a 430GB cap. But when COVID started they made it unlimited with no extra fees going over the data cap. Now that all that has passed why can’t I have a plan that pays for more GBs? Like say unlimited for an extra amount due at billing? I’d gladly pay a little more so I don’t have to turn my box off in the middle of the month because we are too close to our 430gbs. Or pay an outrageous amount of money for overage use.
