Using a 3rd party router WITH BGW 320-505
I have a Netgear R7000 I would like to use in addition to the router in the BGW320-505. I want to be able to use the R7000 as a separate network (not an access point) as I have configured the R7000 for a VPN. I assume I would configure this router as an IP passthrough. Is my desired configuration achievable and are their any drawbacks I should be aware of like firewall settings or avoiding double NAT?

If you use IP Passthrough you will avoid double NAT. The BGW will still appear as a hop in tracerts because it still has a hand in some processing but it's not NATing the traffic to your Netgear.
I can't think of any drawbacks. Feel free to disable all the BGW firewall stuff unless you plan on actually using it to provide Internet access to devices you don't want on the VPN.

Thanks. I’ll leave the firewall alone as most devices will use the ATT router and only a select few devices will use the R7000.
