Esim issue on iPhone

I tried converting my current physical SIM card into an esim through settings in order to transfer the esim to my new iPhone 14, but I decided against it and deleted the esim. But now, on my old phone (the one with the physical sim), it says “SOS” only on the top right corner of my phone and can’t use cellular data. I also can’t receive any texts from group chats either, so I’m pretty sure those two issues are related, but not sure how.
How do I fix

1) the cellular data issue

2) texting issues?

It sounds like your conversion works just fine but then you deleted the esim. You now have no service. You shouldn't have done that. If you didn't want service on the iPhone 14 you had to then transfer it back to the esim on the other phone.

You will have to contact AT&T about getting a new esim for whichever phone you're going to use.

By the way if the new iPhone 14 was an upgrade through AT&T you had to activate it with your phone number. It should have come set up to activate with your phone number. If you don't activate it AT&T will force activate or will wonder if there's some sort of fraud going on. After activation if you wish to switch your service back to an older phone and not use the new one that's entirely up to you.
