Data usage has sky rocketed
Our data usage has sky rocketed in the last week and we can’t figure out what is causing it.

Your phone tracks data usage by app. Reset your network stats and monitor going forward. If data use stays high, you should be able to tell what’s using all the data.

I have noticed recently that my phone will randomly disconnect from WiFi about 5 minutes after connecting. This happens at hotels, airports, and when at home. I think this is a new feature from AT&T to help drive data usage through the roof. According to my account, I've used 9GB in 4 days, even with my phone in airplane mode the last two days.

Again, as @sandblaster said, you can look on your phone and see exactly what apps are using data. If you phone is absolutely true LH in airplane mode, it can’t use any data. Some data reporting is delayed, but if you’ve been in airplane mode for two days, and didn’t turn anything back on (not Wifi, not BT, not anything) it shouldn’t be possible to use any data. As far as randomly disconnecting from Wifi, that’s an issue with your phone. AT&T has no control over your phone disconnecting from Wifi. Get your phone checked out by Apple.

It has been in airplane mode with wifi turned on to block cellular data. I've gotten three notifications that I've exceeded data usage since turning on airplane mode. Thanks for playing.

No, ATT can not cause your phone to disconnect from WiFi. If your phone is doing that, it’s a phone problem, not ATT or your plan or your account.

AT&T does not control your phone.
You do.
If you look at the usage report on each line, at the bottom of the page it tells you that usage can be reported on your account up to 72 hours after actual data was used.
Disconnecting from hotel or airports makes total sense. These are public, shared Wi-Fi connections and cellular may offer a better connection than either of those. So how is your home Wi-Fi? If you have poor connectivity at home, low bandwidth, or if you just have really good Cellular Connection your phone is going to choose the best connection unless you restrict it.
Your phone is designed to use data for services. If you look through the phones settings at what has used data you will see how much data is used by services and applications. As phones Advance they will use more and more data to accomplish functions that they used to accomplish with less data. 5g, bigger screens, more ram, and lots of storage. These little computers are designed to use data.
Last... you would have to have an extremely cheap plan for an older plan not to be as expensive or more expensive than the current unlimited data plans. Do some math. Or switch to prepaid. But do not complain about using excess data and getting overage charges when you can do something about it.

Our home internet data has been unusually high the last two months. All we stream is TV - no gaming or social media. We don't feel we've done anything different but actually went over last month???

You posted on the cell phone forum, not the internet Forum.
However, I stream TV as well. Depending on the quality of the streaming it can use anywhere from 2 GB to 8 GB per hour. Compared to gaming and social media which use far less.
If you are using separate streaming devices, make sure you return it to the home screen before you shut the TV set off. Streaming devices will continue to stream, especially if you are using a live TV service even though the TV itself is off.
If you have a smart tv, turning the TV set off turns off the streaming service at the same time.
We use about 2 terabytes a month. Easily.
