I just found and installed an app called Backlight Manager. It has an option to keep the screen on and also has a timer option. Works perfectly.
It's still disappointing that AT&T rolls out these forced updates that are untested and have such obvious flaws. Perhaps they are banking on the fact that a percentage of users will not find a solution and just buy a new tablet from them. Pretty sleezy way to boost their quarterly sales numbers...
I'll definitely look elsewhere before buying another tablet from AT&T.

This will give you the steps by step on how to manage the home screen. If this is still happening after completing these steps, our next option would be to use our Troubleshoot and Resolve Tool; this will give additional options for Screen troubleshooting.
AT&T gave the ZTE phone but the only option they gave me was to pack the tablet and send it to them by "mail" and to wait for 5 or more days, Is the only option that company gave me,thanks God I solve a problem with my iPhone and that was the reason for using the option of the tablet, as an emergency.. I won't buy any product with that ZTE on it.. I can definitely understand how doing the warranty process and having to wait for the new device to ship is troublesome. This is a process I have done myself in the past. I will be more than happy to assist you with the warranty.
In order to process a warranty you will want to click on this link. Once processing there will be an option for express shipping which is $14.95 and it is added to your next bill. It will take 1-2 business days to arrive with this method.
I have this problem too, after receiving an OTA update to Android 7.7.1. (This happened yesterday 9/28/2017).
The tablet was working perfectly previously. (Why did I accept that update!??!).
Now, even though I have sleep set to 30 minutes, the tablet will dim the screen after 5 seconds and then 1 second later it will be asleep. There is no setting that prevents this.
If I watch youtube, it will stay awake till the video ends, and then 5 seconds later it will fall asleep.
I can never take my fingers away from the screen, even to read a web page, because it will go dark and sleep in 5 seconds unless I tap somewhere on the screen every 5 seconds.
This was a disastrous update. I may have to do a factory reset.
I'm having the exact same problem. Tablet is fine yesterday. After this update, screen fades to black in 6 seconds, changing timeout settings doesn't do anything. What a "helpful" update.
Same problem here after the "update" last night. After trying powering off and restarting with no success, I did a factory reset and that seems to fix it. What a pain! I think I'll wait a while before doing any updates again.
My wife had the same problem on hers and I had to set the sleep setting for the power button to immediately. Then set the screen Time out to 2 minutes or whatever. It resolved the issue.
Go to security settings and choose automatically lock and select immediately after sleep and then set your screen timeout setting in display under sleep.

Did it set you back to before last night's update - (and set you up for another update to the same problem release soon?)
@AT&T: Can't you pause this update till you get your QC people looking into this?
