How can I stop automatic updates on my Galaxy S6?
This is the second update that has forced itself onto my phone while I was using it. After postponing the update a few times, the phone it forced an update causing me to lose the email I had been working on for over 30 min. Then I had to wait another 20 min to use the phone while it updated. This is unacceptable!! I should be able to delay until I'm not using the phone.

Typically you can defer the update, you should get a notification that the update is available and then you choose when to install it. If you've had the update notification for a while it may eventually force the update, however (if it's a critical security update - which the last two were, I believe)

For many apps, you can turn off auto updates in Google play store. Click the dot at top right on installed apps, and uncheck the box.
if you do not allow updates, apps will stop working. You must at some point update all apps.

he is talking about a firmware patch.... not apps...

If you get the update notification turn wifi off..... It should delay the update. It did on my s6 yesterday. both att and non att s6.

also the update can be delayed 3 times then it will force update. IF you just leave it in the app tray it wont do a thing till you tell it to.
