Pre-uverse, if I had a call from a number I didn't recognize and the call went to voicemail, I could listen to the caller as they were leaving the message & then pick up if I wanted to talk to them. Now, I can't hear the message being left and can't figure out how to set my uverse voicemail to allow me to do that. Anyone know if this is an option at all?

Not an option with Uvoice. You should probably use an answering machine.

As skeeter said you probably didn't have voice mail with your previous provider but used your own answering machine. Since I don't have Uvoice I can't give you the exact instructions, but as I understand it, you can log in on-line (instructions here) and change the number of rings before the Uvoice voice mail answers. Change it to a longer number of rings than you have your answering machine set to.
So for instance if your home answering machine is set to answer after 4 rings set Uvoice to say 6 rings. Doing this will allow your answering machine to pick up the call BEFORE the Uvoice voice mail. Keep in mind doing this will basically eliminate any and all Uvoice voice mail features since it won't be answering your calls.
If you don't want to hassle with the Uvoice voice mail set up you can shorten the number of rings on your answering machine to 3 rings so it picks up faster. You might have to tweek either way you decide to do it until you sure that the answering machine always picks up first. You don't want it to where sometimes voice mail answers and sometimes the answering machine answers because then you would have messages in 2 different places to check.

What BeeBee said.
We've had Uvoice for 3 years and the only time Voice Mail picks up is for call wating calls. Otherwise, the machine picks up after 4 rings. I think VM is set to pick up after 6. I'm not sure since it's been so long since I messed with it.
