anybody else notices a huge jump to ATT data usage after upgrading iphone iOS to 5.1?

I have upgraded my iOS to 5.1 via iTunes about 2 weeks ago; the only difference I noticed was the AT&T 3G to 4G has been changed at the up left corner and then my data usage suddenly jump up from about 1GB monthly to 1GB in 3 days. I don't download movies upload pictures except viewing news broadcast clips (3-5 minutes each) once a while. Most of the time during the weekdays I was either at work or at home using Wi-Fi and those 3 days for 1GB was during the weekdays.
Also, opening emails took longer time to load which was not happened prior to the upgrade even with one line or two lines of email body (without attachment). I checked those two situations with my co-workers which also have iphone4s/iOS5.1with Verizon but they have not encountered the data usage skyrocket high and slowness of opening email. I tested it at my work desk for 4 hours (phone had not moved from my desk) and the data usage went up 100MB with uses of checking emails and opening a few small lightweight apps.
I called tech support and was suggested to turn ‘off’ the cellular data (default was ON) to test the data usage which I did and it did stop the data usage with WI-FI but slowness was not improved. BUT WHY DO I NEED TO TURN it OFF to stop the AT&T data usage while using Wi-Fi?? ANYONE???

Some app is running in the background - constantly using data it seems - which would sure make your phone feel sluggish and drive up your data use.
If this is the case, then even when "on wifi" you will, after 15 minutes, start burning cellular data again unless the phone is plugged into AC because it will switch off wifi to save power. If you turn off cellular data in settings that obviously won't happen.
Check for the usual suspects - icloud sync, email message stuck in outbox constantly retrying, etc. Power cycle / reboot the phone.
Hope you find out which of your apps is using data - it can be frustrating if you're not sure what you changed.

No change here, although I upgraded my phone the day I got it, so I have no past history to go by.
But, AT&T shows that I used a whopping 100MB of data in the past month. That's actually lower than what the phone tells me (140MB).
I would say you definitely have something going on in the background...

none here, data usage has been pretty well flat for the last few months, about a 5 or 10 percent variance that can be explained

I upgraded to 6.0 and ever since have been getting warnings about usage. In 3 days I went over my 200GB limit (I'm a very light user) and had to call to see if my account was hacked! I had the same issue last month and thought it was sorted out (ATT gave me a credit) bit it wasn't. It seems that even if you are near WiFi and the phone picks up the signal, the New IOS 6.0 redirects it to use ATT. I was told to turn DATA Off. I've never has this issue in the past and have had an iPhone since they were first released. This is definitely a software issue.

Same here, pretty much consistent for the last year or so. iPhone 4 -> iPhone 5 had a slight increase for a while, but it has settled back down now that I've had the phone for almost 5 months.

Anyways, my non-Wifi data usage has been unspectacular--i.e., no huge spikes in usage month-to-month; I've also not come close to my "limit" of 5 GB (I'm on LTE unlimited) so TBH I don't worry too much about going over, so I wouldn't be able to offer much as far as speculating what could be causing you to go over your limit that other people may have already suggested elsewhere.
As far as your other comment about the phone using cellular if it picks up a cellular signal even when on Wifi--I assume you're aware of the phone switching from Wifi to cellular if/when your phone goes into "sleep" mode and your phone is not connected to an external power source (side note--does anyone know if battery packs like the Mophie Juice Power Pack count as "external power sources", for purposes of this discussion?). Anyways--FWIW even with my iPhone 5 on iOS 6.1 and plugged into an AC power source, I've noticed that when I press the Home button to "wake" my phone up, I can see the LTE symbol visible on the lock screen for <1 second before changing to the Wifi symbol; whether that's just a iOS bug or if indeed my iPhone had indeed switched over from Wifi to cellular (LTE) while asleep but on external power--who knows...and no, my iPhone 5 is not jailbroken.

ran traces on the iphones MAC address through the ASA5510 when the phone went into hibernate mode with or without the additional backpack battery pack the MAC address disappeared from trace as compared to the phone being plugged into the charger, the mac address continued in the trace the ASA5510 connection when the phone was in hibernate
