iSyncr worked really well for me in a simular situation with my new Galaxy Note. Really did a nice job keeping it organized, and carrying over the extra info.

iTunes usually keeps a folder in the Music folder of the PC (probably same for Mac) with all your music on there....you can try dragging the songs on your Galaxy S3 when you connect it to your computer, and it shoujld automatically convert it to a playable format

For standard music you can transfer them to your mobile directly. Make sure that Samsung Kies is actually installed on your laptop or computer. Them following below steps:
1. Attach your Galaxy S3 to your laptop or pc with a USB cable.
Tips: The Samsung Kies will launch automatically. If the software doesn't automatically launch, just double-click the icon on your desktop.
2. Transfer iTunes files to your device
For DRM protected music and videos, you must remove DRM first, and them sync to your galaxy s3 as above way. And you can read the guide: How to transfer music and video from iTunes to Galaxy s3.

The Songs and videos downloaded from iTunes are still copy-protected with digital rights management (DRM) which will prevent you playing them on on-apple device like galaxy s3, however, you may refer to this tutorial to play itunes songs on samsung galaxy s3

Don't know about videos (have never bought any from iTunes) but songs haven't been DRM protected on iTunes for years (since early 2009) and there is no copy protection. If you have some older ones, they may have DRM. But anything recently bought will not. For songs with no DRM, you can literally just cut and paste the songs from your computer to the phone. But the iSynchr app on the Play Store also works great to not only tranfer the songs to your phone, but your iTunes playlists.

Simply mount the phone or an SD card on the computer and drag and drop the music you want. I used a folder called Music on my SD card. Itunes can't manage the music the way it does with the iPhone or an iPod but the files will play just fine with the stock music player once their copied onto the phone.

Make sure your music is synced on your galaxy s3 (in settings under your gmail account) and it will be there for you to listen. It's pretty self explanatory once you get in there. May not be the best option for you but it's an option.

Galaxy S3 plays AAC just fine, as do most all Android devices these days.
Yes, iTunes is set to rip CDs to AAC format, by default. But its easily changed to default to MP3, by simply going into the Settings in iTunes.
And yes, all purchased music on iTunes are AAC, in Apple's attempt to use non-standard (or even proprietary) formats and technologies (hello Lightning connector), instead of standardized ones to prevent customers from switching to other device brands. But most devices support AAC now, so customers are no longer limited.

Everyone, check out this great video tutorial on this very subject: http://www.youtube.com/watch?v=U_iAmIGtQ8U
Keep in mind that this is not a function currently supported by AT&T and any complications resulting from third party app downloads will be handled by the third party app provider, not AT&T.
